Chocolate Cupcakes

I was searching allrecipes.com the other day for a chocolate muffin recipe that didn't use all the calories I eat in a year--and I found one that has passed my kids taste bud tests. And of course mine. I altered it--I continually try to nutrition up things to make me feel better abot chowing down on them. Here is the recipe as I make it--it's slightly different on allrecipes.com:

Chocolate Muffins (they are dense like a muffin but taste like a cupcake)

Ingredients
2 1/3 cups all-purpose flour (I sub whole wheat flour)
1 cup sugar
1/3 cup baking cocoa
1 1/2 teaspoons baking soda
1/2 teaspoon salt
3 eggs
1 cup sour cream (I use fat-free)
1/2 cup water (I use fat-free from the tap)
1/2 cup milk
1/2 cup applesauce (in place of the oil)
1 teaspoon vanilla extract
1/2 cup semisweet chocolate chips (hmm--I add more)

Directions:

1.In a large bowl, combine the flour, sugar, cocoa, baking soda and salt. In another bowl, beat the eggs, sour cream, water, milk, oil and vanilla. Stir into dry ingredients just until moistened. Fold in chocolate chips. Fill greased or paper-lined muffin cups two-thirds full. Bake at 325 degrees F for 15-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Makes 24. I use the 1/4 cup to fill the muffin tins.

After you bake these, you can frost them with oh so nutritious chocolate frosting. I find that if I leave them on the counter without frosting-they disappear. Someone suggested mixing in the chocolate chips to the dry ingredients so they don't sink to the bottom-I haven't tried that-because I don't care if they sink to the bottom as long as they are in there! I have made these three or four times--this time (please don't tell anyone) I forgot a whole teaspoon of baking soda--so we'll see if the starving boys notice.

Excuse me, I'm going to go try them to make sure they aren't poisonous...

In a pinch (ok most if the time) I use a weightwatchers secret and mix one box of cake mix with a can
of pumpkin pie filling. That's it! Easy fast cupcakes that are relatively healthy. You can use any type of cake mix but I love devil's food. I buy up the cake mixes when on sale less than $1.00 and stock up on the pie filling thanksgiving when they're cheap.
